A decade ago the community at Wallis Lake on the mid-north coast of New South Wales was in turmoil when its lucrative oyster growing industry was shut down by a hepatitis contamination scare. The commercial fishing and tourism industries were also threatened. Today, Wallis Lake is officially the cleanest oyster growing area in the state and accounts for a third of all the Sydney rock oysters produced. Sean Murphy went to find out how they did it.
